Rocou, Oucou, Achiote, or Annatto, comes from the fruit of the Achiote (Bixa orellana) tree. This plant has been used as a natural dye by the Amerindians and Caribs; it was and is used as red body paint, food color, and dye in other applications. This versitile plant can be found all over the Caribbean.
